Combine rice and water in the Glen Rice Cooker Pot.
While the rice cooks, crush the peanuts coarsely in a grinder and set aside.
Melt the butter in a large skillet over medium-high heat. Sauté onion until golden brown.
Stir in ginger, carrots, and salt to taste. Stir over the heat just long enough to retain crunch.
Switch off heat and stir in red chilli powder and crushed peanuts. When the rice is done, add it to the skillet and stir gently to combine with the ingredients in the skillet.
