THIS HOLI, GIVE A HEALTHY TWIST TO GUJIYA & THANDAAI
Holi is just upon us! Although it is the festival of colors, gathering & much more but most importantly it is about food! Any festival is quite incomplete without a variety of delicacies, be it sweet or savory, and holi is no exception.
When we have already talked about food, how can we forget Gujia – the must have for Holi celebration! Extremely delicious khoya filled dumpling that are traditionally deep fried and dipped in sugar syrup. So, before we go any further with the salivating description about gujiya, let us discuss about the recipe so that this Holi, you can prepare this delicacy the easy way and of course without oil in Glen air fryer!
The ingredients you need, to prepare Gujia are as follows: 2 cups refined flour, 1 cup clarified butter and water for the dough. 1 cup khoya, 1 cup sugar, 1 tsp powdered green cardamom,1 Tbsp finely chopped almonds and Ghee for the filling. 1 cup sugar and water for the syrup.
The process starts with kneading of the flour with water and ghee to prepare the dough (Glen Food Processor can be used for kneading this dough), which is to be left aside for an hour to settle. Now let’s get to make the filling for the Gujia.
Firstly saute the khoya lightly on medium heat till it turns light brown in colour. Once it cools, mixed sugar, cardamom and almonds or dry fruits of your choice.
Make oval shapes with these fillings and then keep it aside. The next step is to make balls of the dough and flatten it into rounds, mildly thick. Now, wet the edges and then fill it with the khoya filling and press the edges together to seal it as tightly as possible to prevent any leak while frying it.
The edges can be shaped as per your own design. As per traditional method, these Gujiya’s are then deep fried in ghee and served. To make the gujiya in fryer, firstly preheat and set the temperature & time in 3047 digital fryer. After that, add the gujiya in basket and do not overload. Keep on rotating the gujiya in between the process to achieve desired results.

Preparations: Add soaked & blanched cashews, almonds, pistachios, melon, poppy & fennel seeds to the dry grinder of Glen 4048 multi function Active blender. Also add cardamom, cinnamon & saffron. Pour some rose essence. Make a coarse paste. Now transfer the paste into the blender jar and pour some milk and blend properly.
In a big vessel, add approx 4 cups of milk and bring it boil. Let it cool, then add the ground paste and stir well. Cover & refrigerate the mixture for atleast 5 hours. Seive the milk & Serve chilled.
