    What is Hyderabadi Haleem?

Haleem is a thick, stew porridge which is composed of meat (traditionally chicken or mutton), lentils, ghee, broken wheat (dalia), and numerous spices that alone serve a warming purpose. It is traditionally cooked in large cauldrons over wood fires for hours, primarily during the holy month of Ramadan in Hyderabad.

To get authentic haleem, the extravagant spices and ingredients are incorporated into the dish-then the entire dish is fused over the fire where it is slow cooked, which makes meat tender and allows the bold flavors to burst forward.

    Equipment Tip for Easy Cooking

    4 Burner Glass Gas Stove

Before we begin, it helps to have a multi-burner gas stove that can handle heavy-duty cooking with ease. A great choice is the 4 Burner Glass Gas Stove with:

    • 1 High Flame Burner for quick pressure cooking
    • Forged Brass Burners that heat evenly and last longer
    • Auto-Ignition so you’re never searching for a matchstick
    • Sturdy Pan Supports to hold your heavy pressure cooker and handi safely

This setup is perfect for a dish like haleem that requires long, simmering cook times across multiple burners.

Step-by-Step Recipe for Authentic Mutton Haleem

Step 1: Soak the Wheat and Lentils

Wash and soak the broken wheat and all the lentils together in enough water for at least 4 hours (or overnight if you’re prepping in advance).

    Step 2: Cook the Mutton

Take a large pressure cooker and place it on the stove. Pour in 6 generous cups of water along with mutton, turmeric, salt, and ginger garlic paste, then heat it up.

After letting it soak for a moderate amount of time, 5-7 minutes, close the lid of the pressure cooker and wait for 4-5 whistles, or until the meat is tender. Remove bones and shred the meat but retain the stock for future steps.

Step 3: Cook the Lentils and Wheat

In another pot, add the soaked wheat and lentils with some salt and 4 cups of water. Cook on medium flame until everything is soft and mushy. You can also pressure cook this for 3–4 whistles.

Use a hand blender or wooden masher to smooth it out into a fine paste.

Step 4: Make the Haleem Masala

In a deep handi or large kadhai, heat ½ cup ghee on your gas stove’s small burner. Add cumin, cardamom, peppercorns, cloves, bay leaf, and cinnamon. Sauté for 1–2 minutes.

Mix all the powdered spices with shredded meat and the cooked mutton, and add it to the pan. Let it simmer on low heat for 15 minutes so it can bloom fully.

Step 5: Combine the Meat and Wheat Mixture

Next, add the meat mixture along with the lentil-wheat paste into the handi. Keep stirring the mixture so it doesn’t burn at the base or form lumps, and then pour in the remaining meat stock to reach your desired consistency.

Stirring the pot every few minutes, let it simmer on low heat for 45 minutes.

    Step 6: Temper the Onions

In a small frying pan, slice and add the onions into ghee until crisp and golden. Reserve half to set aside for garnish while the rest go into the haleem.

Finish with minced coriander, mint, lemon juice, and mix well.

    Optional Add-ons (But Highly Recommended)

    • Garnish with fried cashews and raisins in ghee.
    • Add a spoonful of fresh ghee on top while serving.
    • Pair with naan or roomali roti or even enjoy on its own.

Why Home-Cooked Haleem is Worth the Effort

While it is fine to buy ready-made haleem from restaurants, the ability to cook it your way makes the entire experience very unique. Also, the right tools for the kitchen, like Glen’s 4 Burner Glass Gas Stove, makes cooking seem less like work.

Here’s how it supports a demanding recipe like haleem:

    • Auto ignition makes cooking efficient.
    • Forged brass burners last longer and don’t warp.
    • Tempered 8 mm glass top resists scratches and stains.
