Step-by-Step Guide to Making Phirni

1. Prepare the Rice

  • The rice should be free of residual milky starch, which means that the water's outflow must be clear after each rinse; therefore, it requires multiple washes.
  • Allow the rice to soak in water for half of an hour.   
  • After the rice is drained, allow it to air-dry for 15 to 20 minutes. Then, spread it on a towel that has not been contaminated previously. 
  • The dried rice should be coarsely ground with either a food processor or a mixer grinder.. Aim for a granulated texture instead of a fine powder.

2. Phirni Preparation

  • In a saucepan, heat 3 1/2 cups of milk over medium heat until it reaches a boiling point. Do take care, as it can overflow.
  • Once the milk is boiling, turn the heat down to low and add the ground rice paste, continuously stirring to ensure no lumps form.
  • Cook the mixture for 15–20 minutes on low heat until it thickens and the rice is fully cooked.
  • For sweetness, add sugar and saffron threads along with cardamom powder. Keep stirring occasionally as you cook for an additional 5 minutes.

3. Cool and Set

  • Remove the pan from heat and let the Phirni cool slightly.
  • Pour the mixture into individual serving bowls or traditional clay pots.
  • Refrigerate for at least 4 hours, preferably overnight, to allow it to set and chill.

4. Garnish and Serve

  • Before serving, garnish the Phirni with chopped almonds and pistachios.
  • Serve chilled and enjoy

Storing Phirni

You can keep Phirni in the refrigerator for 3 days. Make sure to wrap the bowls in a lid or plastic wrap, otherwise the Phirni will absorb other smells. You can freeze Phirni for up to a week, but it may change in texture when thawed.
