Steamed Modak Recipe – Ganesh Chaturthi Special

Stage 1: Preparing the stuffing –
• Add 1 tsp ghee into a hot non-stick pan • Add jaggery & grated coconut, cardamom powder and sauté for a while or till the mixture combines well • When the mixture becomes thick, turn off the flame. Do not overcook. • Take out the mixture in a plate, add the chopped nuts and let it cool

Stage 2: Preparing the dough –
• Add 1 cup of water, ghee and pinch of salt to a pan and let it boil • Reduce the flame to sim and add the rice flour, mix continuously to ensure no lumps are formed • Turn off the flame and cover the pan with lid. Let it rest. • While the dough is slightly warm, knead it to a soft crack free consistency. If required, add ¼ cup slowly to the dough. • Make a log shape and divide into small balls. Place them in a plate and cover with a damp cloth. Do not let the dough balls become dry.

Final Stage: Forming Modaks with mould –
• Grease the moulds with ghee using a brush for even layer. • Place the dough ball inside and spread it towards the mould side evenly • Take small amount of jaggery mixture and fill inside the mould. Press firmly. • Open the mould carefully and take out the ready modak • Repeat the above steps to make modaks one by one in mould • Once ready, add water into the Glen steam cooker • Adjust the modaks into the greased compartments ensuring enough space among each of them • Pour few drops of ghee over the modaks and close the lid. • Let the modaks steam for atleast 10 minutes • Once done, take out in serving dish and garnish with pistachio slices
